Miso Tahini Dressing [makes 6 servings]

6 TABLESPOONS TAHINI // I USED SOOM TAHINI
2 TABLESPOONS RED MISO PASTE
2 INCH KNOB FRESH GINGER, PEEL REMOVED
JUICE OF 1 LEMON
1 TEASPOON REDUCED SODIUM SOY SAUCE
¼ CUP FILTERED WATER

In a food processor fitted with an S blade, or a high speed blender, pulse all ingredients until smooth.

½ CUP CHILLED COOKED STICKY BROWN RICE
¼ RIPE AVOCADO, PEELED, PITTED & SLICED THIN
1 BABY CUCUMBERS, CUT INTO ROUNDS
2 RADISH, QUARTERED
1 SHEET NORI SEAWEED, TORN INTO SMALL PIECES
½ CUP MUSHROOMS (BELLA, SHITAKE, OYSTER), SLICED THIN
2 TABLESPOONS MISO TAHINI DRESSING (SEE ABOVE)
2 TABLESPOONS GREEN ONIONS, THINLY SLICED
1 TEASPOON TOASTED SESAME SEEDS

In a large salad bowl, toss arugula, sticky rice, avocado, cucumber, radish, nori, mushrooms & 2 tablespoons Miso Tahini Dressing until well combined. Top with thinly sliced green onion and sesame seeds, enjoy!
