Three months into ‘solids’, Poe and I have gotten into the habit of sharing my morning breakfasts – me, whizzing up a smoothie favorite, Poe, perched with his little birdy mouth agape, ready to dig in. Celebrating his ever expanding palate and dietary needs while keeping cognizant of my time and monetary budgets, I usually thickly mash a quarter of a banana or smaller piece of ripe avocado, then stir in a heaping spoonful or two of my morning concoction. A smoothie bowl all his own, buzzing with color, buzzing with nutrition.
Recently craving greener, more earthy smoothies, made with just a bit less banana and just a bit more avocado and unsweetened produce, my cauliflower zucchini smoothie has become our morning staple; nutritively balanced and also subtly sweet and wonderfully rich and creamy without leaving me overly full. Taking the smoothie’s quintessential base ingredients- zucchini, cauliflower, avocado, and banana- below you’ll find our three variations- one green, one purple, and one pink- all made from organic ingredients found at ALDI. Taking full advantage of ALDI’s extensive selection of fresh, in-season, and organic produce, both fresh and frozen, Poe and I had the best time walking through their shop isles, holding, smelling, and picking some of our very favorite ingredients for these recipes – making our breakfast more than just the act of eating, but a true and interactive celebration of where our meals come from. We serve ours on the extra thick side, mine topped with granola and a side of piping black coffee.

My Cauliflower Zucchini Smoothie, 3 Ways
makes 1 smoothie, 16 ounces
Prep time = 1 minute
Cook time = 1 minute
½ cup cauliflower florets, frozen
½ medium ripe banana, frozen
¼ zucchini, diced and frozen
¼ ripe avocado, peeled and pitted
1 cup unsweetened Friendly Farms original unsweetened soy or almond milk
In a high-speed blender, whiz all ingredients until smooth. Serve in your favorite glass, enjoy!
GREEN: add 2 cups SimplyNature Organic Baby Spinach, ¼ teaspoon SimplyNature Organic Ground Cinnamon & 1 scoop protein powder (optional)
