A devout family of coffee drinkers, and perhaps coffee pushers, growing up my mom would spend her holiday season hand making chocolate covered spoons. Curated wooden ones she’d dip in an assortment of chocolates, toasted nuts, and warming spices for our closets friends and family to wake up to on Christmas and Hanukkah mornings and stir into their piping cuppas. A simple yet completely heartfelt gift meant to instill that perfect pop of sweetness.
Continuing that tradition of instilling homemade sweetness, but with a superfood sprinkled twist, Andrew and I created our own little rendition, what we’re fondly referring to as Superfood Sleigh Snacks. Sourdough pretzel nuggets hand dipped in antioxidant rich dark chocolate, each little ball is then adorned with goji berries, coconut, and pepitas for a soul nourishing and wonderfully festive little bite. Perfect little pops to leave out for Santa and his reindeer or wrap up to bestow upon a someone special, these sweet little treats are the perfect homemade gift to share the holiday spirit. We serve ours with black coffee (..tradition), or with chilled glasses of eggnog.
Superfood Sleigh Snacks [makes enough for 2 gifts]
¾ cup dairy free dark chocolate chips
2 teaspoons coconut oil
2 cups sourdough pretzel nugets
¼ cup goji berries, roughly chopped
¼ cup coconut flakes, roughly chopped
¼ cup raw pepitas, roughly chopped
Line a large plate or baking sheet with parchment paper.
Place heatproof Pyrex or a metal bowl over a pot of gently simmering water, making sure the bowl doesn’t touch the water. Add the chocolate chips and coconut oil and let them melt, stirring occasionally. Once melted, remove bowl from heat.
Carefully dip each pretzel into the chocolate, letting excess drip off before transferring to the parchment lined plate. Sprinkle with desired amounts of coconut, goji berries, and pumpkin seeds, then freeze for a minimum of 15 minutes, or until chocolate has completely hardened.
