This past Friday evening, my dear friend Atara and I hosted our second The Wandering: our plant based and seasonally inspired gathering series, offering Washington, DC’s wanderers the opportunity to step away from their everyday chaoses and assemble around the communal table. Preparing an intimate and home cooked early autumn feast, piled high with an array of seasonal crudité, warm tomato and bread salad, spiced eggplant with the most divinely smokey carrot hummus, and a communally torn loaf of crusty sourdough, we opened our home and our table to eight ‘Wanderers’. Coupled with the haunting notes of Jeff Buckley’s Hallelujah whispering in the background (extemporaneously performed live by one of our guests), we basked in this truly magical moment in time, where we could step away from day-to-day this’s-and-that’s and just be.
Atara and I concluded our evening with her Pear Skillet Crumble with Thyme and Ginger, a recipe developed for the evening, served piping hot and topped with a heaping dollop of melty vanilla ice cream. The kind of soulful dessert that truly warms you from the inside out, this plant based crumble celebrates the natural sweetness of speckled pears, plump golden raisins, and apple, paired with those familiar autumn flavors of pecan, cinnamon, ginger, and clove. Wholesome and cozy, this simple dessert is best served with a cool breeze and a thick wool sweater.
Pear Skillet Crumble with Thyme and Ginger [serves 8]

7 medium ripe pears, sliced (we used a sweeter variety)
¼ cup cup golden raisins
¼ cup fresh apple sauce
1 cup coconut sugar, divided
¼ cup cornstarch
1 inch knob fresh ginger, grated
2 tablespoons filtered water
3 teaspoons ground cinnamon, divided
4 teaspoons fresh thyme, divided
1 teaspoon ground cloves
juice of 1 lemon
1 cup rolled oats
1 cup all purpose or whole wheat flour
½ cup raw pecans, roughly chopped
½ cup coconut oil, melted at room temperature
½ teaspoon sea salt
Preheat oven to 375 degrees F, rack in the middle.
In a large bowl, toss sliced pears with raisins, apple sauce, ¼ cup coconut sugar, cornstarch, ginger, water, 2 teaspoons cinnamon, 1 teaspoon thyme, cloves, and lemon juice until pears are well coated. Transfer to a large oven safe skillet and set aside.
In another large bowl combine oats, flour, pecans, coconut oil, and sea salt with remaining ¾ cup coconut sugar, 1 teaspoon cinnamon, and 3 teaspoons thyme until ingredients are well combined. Evenly sprinkle mixture over pears, then place skillet in the oven for 45-60 minutes, or until crumble is golden and pears are bubbling. Remove from heat, serve warm, and enjoy!
