BAKED APPLE OVERNIGHT OATS

Still playing with the concept of overtly nourishing convenience- wildly simple, one-pot, and time saving meals – today I couldn’t be more excited to share my Baked Apple Overnight Oats recipe, your perfect morning bowl. Made with rolled oats steeped in a raw homemade vanilla almond milk, left unstrained for a more belly filling protein and monounsaturated ‘good’ fat packed bite, this chilled breakfast is then elevated with a sweet early autumn apple compote. By quick simmering the apples with a splash of pure maple and cinnamon, we’re able to foster those comforting baked apple flavors in record time, leaving you with those extra morning moments to do what you do. This overnight oat can be made a week in advance for you to pop out of your fridge and munch on-the-go. We serve ours topped with an extra splash of almond milk and a handful of granola.

Baked Apple Overnight Oats [makes 6 servings]

1 cup raw almonds
3 cups filtered water
1 teaspoon pure vanilla extract
pinch of sea salt
2 tablespoons coconut oil
4 medium pink lady apples, diced
¼ cup pure maple syrup
½ teaspoon cinnamon
2 cups rolled oats
6 tablespoons chia seeds

In a medium-sized tupperware, submerge almonds in water. Cover and place in refrigerator to soak for a minimum of 8 hours – overnight. Drain almonds, then transfer to high-speed blender. Blend with filtered water, vanilla, and sea salt for 3-5 minutes, or until mixture is very smooth. Set aside.

In a medium pot, heat coconut oil over medium heat. Add diced apples and cover, stirring occasionally, until apples are fork tender and just about to fall apart. Remove from heat and stir in maple syrup and cinnamon until well combined. Set aside.

To assemble: in a large-sized tupperware, stir almond milk and half of the apple compote with oats and chia seeds until very well combined. Cover and refrigerate for a minimum of 8 hours – overnight, or until oats are very soft. Divide mixture evenly into six small tupperware, topping each with an equal amount of remaining apple compote. Oats will keep for up to a week in your refrigerator. Serve chilled at your convenience, enjoy!
