This simple, yet flavor packed smoothie is made with a whizz of bright pineapple, thirst quenching coconut water, a heaping handful of greens, and ripe avocado. Loaded with monounsaturated fats (the good guys that lower cholesterol, reduce heart disease and cancer risk, and also keep your belly full in the best kind of way) while remaining wonderfully light, this creamy dreamy piña colada like smoothie is a perfect breakfast accompaniment, post workout refresher, or just because snack. Sunshine Smoothie [makes 1 smoothie, 16 oz]
1 cup frozen pineapple chunks
1 cup baby spinach
¼ ripe avocado, peel and pit removed
1 teaspoon wheatgrass powder (optional)
1 ¼ cups coconut water
Blend all ingredients in a high speed blender until very smooth. Serve and enjoy!
