Meandering in a touch-and-go goodbye to autumn and winter’s piping and indulgent porridges and compotes, my PB and Purple Berry Smoothie Bowl has quickly become the perfect between-season-breakfast-gap-filler; the best of both worlds while I take my sweet time adjusting. A decadent riff of my Banana Avocado Ice Cream, this simple, yet overtly nourishing nut butter berry smoothie boasts a healthful dash of cinnamon and a perfectly portioned package of Earthbound Farm’s Kale Berry Smoothie Kickstart. A frozen parcel filled with USDA organic blueberries, strawberries, and their GMO and synthetic chemical free kale, this bite couldn’t be simpler. Best served with a black coffee or as a post-workout refuel, rich in health enhancing antioxidants, belly filling fiber, and heart supporting fats, I top my smoothie bowl with an extra dollop of nut butter, slightly defrosted frozen berries, and sliced almonds for crunch.
PB and Purple Berry Smoothie Bowl [makes 2 bowls]
1 package Earthbound Farm Kale Berry Smoothie Kickstarter
2 medium ripe bananas, peeled and frozen
2 tablespoons nut butter of choice
1 ½ cups unsweetened non-dairy milk of choice
½ teaspoon ground cinnamon
¼ ripe avocado
Place all ingredients in a high-speed blender and whiz until very smooth, thick, and creamy.
Pour into two bowls, then top with desired toppings. Serve and enjoy!
