I’ve never been one for New Year’s resolutions; intention setting and celebrations, perhaps. But the concept of a resolution kicking off January first to last the course of an entire calendar year has always felt, to me, like the short-term bandwagon, a practice riddled with higher risk for disappointment than good. How many of us enter into these noble resolution with the best of intentions, a head full of gusto, only to lose momentum tapering back to our pre-resolution-setting-selves? I’ve certainly been guilty of letting plans slip. Instead of jumping to that big kahuna resolution, this 2016, and really throughout the course of our every-days, I encourage us to embrace the mantra of gradualness, celebrating each victory, each run however long, each piece of fruit munched, each attended yoga class. By acknowledging our incremental efforts and successes, however minute or grand, life and our attitudes about it hold the opportunity for a monumentally positive spin. We allow ourselves to find a success in ever endeavor.
With so many of us kicking off this new year with the intention of incorporating healthful practices, I thought I’d reiterate the essentiality of whole body wellness, not only celebrating a healthful meal or that butt whopping stair master experience, but how each of these body nourishing undertakings are only elevated and made more impactful by the other. For me, I feel my strongest sneaking casual and windy walks and stretches into my workweeks, breaking up those longer periods of desk and computer time with fresh air and motion, and save my longer, more rigorous workouts for weekends. No matter the day, I’m conscious to fuel my motion with protein and carbohydrate rich meals and snacks for ideal muscle recovery and glycogen store replacement. Hot and ‘hangry’ I keep preprepared and grab-and-go options available in my refrigerator and pantry, giving myself every opportunity to reach for something optimal post-sweat. A longtime fan of sprouted toast or ripe banana with nut butter or non-dairy yogurt with granola and berries, recently, I’ve found myself most drawn to the humble, nutrient rich and easily digestible oat. Simple and overtly convenient, warm or soaked porridges seem to just get it, b-lining their way right into your cells, making you feel more alive and replenished.
A humbly elevated version for your refueling ease and enjoyment, today I couldn’t be more excited to share my Overnight Oats Pots with Chocolate and Coconut. A make-ahead post-workout, breakfast, or anytime meal, these ooey-gooey pots are made with divinely rich and creamy coconut milk and yogurt, protein packed nut butter, and Seven Sundays Muesli, filled with an abundance of energy boosting carbohydrates from whole grain oats, rye, and barley, almonds, apples, dates and cinnamon. I serve my vegan chocolate coconut overnight oats chilled, fresh out the fridge. Pro tip: the longer they sit, the more dreamy they become.
Overnight Oats Pots with Chocolate and Coconut [makes 4 pots]
2 cups cacao and coconut muesli
1 can (14 ounces) light coconut milk
2 tablespoons maca powder
1 container (5 ounces) non-dairy yogurt
2 tablespoons cacao nibs
2 tablespoons hazelnut butter (or nut butter of choice)
4 tablespoons coconut flakes
In a large bowl stir together muesli, coconut milk, and maca until well combined.
In a small bowl, or the yogurt’s packaging, stir together yogurt and cacao nibs until well combined.
To Assemble: in 4 of your favorite tupperware or jars, evenly distribute layers of muesli mix, followed by yogurt, followed by nut butter, then coconut flakes. Repeat until each jar is filled, store in your refrigerator overnight to allow oats to soften and flavors to meld, or for up to five days. Serve cold, enjoy!
