The sort of cookie where every bite is gold, with bits of chewy oats, chocolate, cherry, and pecan all swirled and baked into disk-form perfection, today I couldn’t be more excited to share an impromptu sweet experiment gone really right, my Chocolate Chip Muesli Cookies with Cherry and Pecan. Nourishing enough for the virtuously healthful muncher, made with an unprocessed and low glycemic array of coconut sugar, coconut oil, whole wheat flour, and whole grain oats, with just the right amount of sweet tooth quenching dark chocolate snuck in, these crispy on the outside, divinely chewy on the inside vegan chocolate chip oatmeal cookies will hit your spot. I serve mine alongside a piping mug of black coffee, or crumbled atop a creamy bowl of banana ‘ice cream’.
1 tablespoon chia seeds
3 tablespoons filtered water
1 cup coconut sugar
½ cup coconut oil, liquid
¾ teaspoon vanilla extract
1 cup vanilla cherry pecan muesli
1 cup whole wheat flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
¼ cup dairy free dark chocolate chips
Preheat oven to 350 degrees F, rack in the middle.
In a small bowl, whisk together chia seeds and water. Set aside for 10-15 minutes, or until chia forms a thick gel.
In an electric stand mixer fitted with a whisk attachment (or in a large bowl, using a whisk), beat chia gel, coconut sugar, coconut oil, and vanilla until well combined and creamy.
In a separate medium bowl, whisk together muesli, flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add to the coconut chia mixture, slowly beating on low speed until just incorporated. Stir in the chocolate chips.
Using an ice cream scooper, or steady hands, form dough into 14 even balls, placing them on a nonstick baking sheet. Press down on each ball so the tops are flattened, then place in oven for 14 minutes, or until golden brown and fragrant (your home will smell DIVINE). Allow to cool completely for a more chewy cookie. Serve, and enjoy!
