Often dubbed the under packer, more often than not finding myself across the country or transatlantic sans appropriate sweater, socks, or undergarments, a packing indifference met with a air of agitation by my well organized counterpart, I never leave home, even on a quip to the market, without a plant based snack and a bottled water handy. Call it the vegan plight, this inborn gatherer mentality conditioned after one too many optionless meals, rolled eyes, exasperated waitresses, exasperated me’s. And so I always leave ready, should the hunger pangs strike.
In the midst of holiday travel or any year round gallivant, I try keeping at least one meal, usually breakfast, homemade and as nourishing as possible. Keeping staples like oatmeal, muesli, bananas, and almond milk handy in my travel bag, portable ingredients not requiring refrigeration, and adding little boosts, like my vegan Power Powder recipe to elevate them that touch further, leaves me feeling bright and sustained until my next, potentially less healthful meal. A very simple blend of nonperishable raw superfoods, sacha inchi, maca, chia, and moringa, I take a few tablespoons and either stir them into my warm or overnight oats, blend them into any smoothie, or shake them up with a chilled glass of almond milk. Sacha inchi provides that belly filling and bone, muscle, and hormone building protein, paired with omega, fiber, and protein rich chia, and hormone balancing and energy boosting maca. For a pop of portable green, I also add dried moringa, high in digestible protein, calcium, iron, vitamin C and antioxidants, almost like nature’s multivitamin. Subtly nutty, sweet, malty, and highly digestible, wellness on-the-go really couldn’t be easier.
Power Powder [makes 8 servings]
In a large mason jar, or your favorite well sealable tupperware, combine sacha inchi, maca, chia, and moringa until each ingredient is well distributed. Mix into your favorite smoothie, porridge, overnight oat, or almond milk as desired, serve and enjoy!
