Andrew is the sort of ‘early to bed’ spirit whose sole intention is to ‘early to rise’ for breakfast. His dreams packed to the brim with images of oatmeal, chocolate chip waffles, maple syrup, and coffee, cozied up on the couch with Good Morning America humming, and perhaps some subtle EDM in the background for good measure. His enthusiasm for munching carrying through to all meals, snacks, bites, it’s those first few morning mouthfuls, that hint of subtle sweetness sneaked into the nourishing, that really sets the tone for his (and my) days. But, with mornings just as hectic and out-the-door as the time constrictions of lunches and dinners past, we’re both very conscious to keep our chow construction quick.
In celebration of National Oatmeal Day, October 29, today I couldn’t be more excited to share my Dark Cherry Chocolate Overnight Oats. The: what to eat when you have to run out the door, but would really love to sit and linger with a bowl full of chocolate and a mug full of coffee while maintaining your healthful ideologies. An indulgent yet simple and one-bowl recipe requiring minutes of stirring for a weeks worth of breakfasts, this vegan chocolate overnight oats is made with Modern Oats‘ certified gluten free, and non-GMO verified Chocolate Cherry Oatmeal cups, settled to perfection after an overnight jaunt with sweet dark cherries, tangy yogurt, and protein and fiber rich chia seeds. Beyond ooey gooey, creamy dreamy, and altogether cozy, Andrew and I often take our oats to-go, topped with extra cherries and chocolate chips. Don’t forget the piping mug of coffee.
Dark Cherry Chocolate Overnight Oats [makes 4 servings]
4 containers Modern Oats Chocolate Cherry Oatmeal
3 ½ cups unsweetened almond milk
1 container (5 oz) unsweetened dairy-free yogurt
1 cup frozen dark cherries, halved
¼ cup chia seeds
In a large bowl, stir oatmeal, almond milk, yogurt, cherries, and chia seeds until well combined.
Divide mixture evenly amongst the 4 Modern Oats cups or air-tight tupperware, then refrigerate overnight. Remove from fridge at your convenience, topping with extra sliced cherries, almond milk, or yogurt if desired.
