My family home didn’t come with central air conditioning, though we did have one big, roaring window unit in my ‘formal’ living room. We’d pretend we were camping and set up lodge on the couches, under the coffee table, basking in the coolness of that one room while the rest of the house sweltered in the New England summertime. After long days at camp (real camp, not living room camp) we’d come home to a freezer stocked with Fla-Vor-Ice, those florescent, plastic tube pops indicative of a hot day well lived. This Wanderlust festival (and often back in DC, post yoga or after a really sweaty jog), I’ve been reaching for my Aloha Sunshine Popsicles, your favorite green smoothie in convenient stick form. These vibrant popsicles are made with a simple blend of ripe banana, sweet pineapple, coconut, and Aloha Daily Good Greens powder. Aloha Sunshine Popsicles [makes 10 Popsicles]
1 ripe banana, frozen
1 cup pineapple, frozen
1 cup baby spinach
1 packet Aloha Original Daily Good Greens
¼ cup raw cashews
1 cup light coconut milk
½ cup coconut water
¼ cup raw shredded coconut
In a high-speed blender wiz banana, pineapple, spinach, Aloha, cashews, coconut milk, and coconut water until very smooth.
Gently stir in coconut flakes then divide mixture evenly amongst popsicle mods. Cover the molds, insert sticks, and freeze until firm.
