Finding ourselves at the same Mexican inspired restaurant for too many a celebratory bash, we have an ongoing debate amongst friends – margarita: frozen or on the rocks? Though I typically commit to the rocks camp, convincing myself of the purity of my tequila laden tipple, there is something inherently lighthearted about the casual frothiness and salted rim surrounding the adult-ified slushy. Made with juicy watermelon, raw honey, and a few sprigs of fresh mint, today I couldn’t be more excited to share my Frozen Watermelon Lime Margaritas – ‘the hard stuff’ with a healthful twist. Perfect for summer barbecues or your upcoming 4th of July festivities, this naturally sweetened, but not too sweet seasonal sip is light, cooling, and irresistibly fresh. A slushy you can feel good about; the best of every world.
Taking my gatherings to the next level, no summer celebration would be complete without a little patriotic style. Perfect for outdoor BBQ’s or any casual encounters, Susty’s 4th of July tableware provides hosts an environmentally friendly and playfully vibrant way to serve up something special, made from 100% recycled, biodegradable, certified compostable, and disposable tableware – including wood cutlery, (my favorite!) star spangled straws, and napkins. Susty’s tableware can be found on the Susty Party website. Be sure to use my code inmybowl10 at checkout for an extra $10 off (!).
Frozen Watermelon Lime Margaritas [makes 6 cocktails]
1 large watermelon (about 8 cups), cut into cubes and frozen
8 ounces tequila blanco
2 whole limes, peels removed
1 tablespoon raw honey
1 inch knob ginger, peeled
6 mint leaves
Place all ingredients into a high-speed blender and blend until smooth and very thick (mixture will loosen immediately once poured).
Divide among glasses, garnish with a watermelon wedge, and enjoy!
** Note: To make your margarita a refreshing watermelon slushy, simply substitute equal parts tequila for coconut water. Blend and enjoy!
