I’ve always romanticized Portland, wanted to be in Portland – this far off, mystical land of the hippie with every cause, the wildflowers, the kind hearted, clairvoyant, and omni-conscious. Like I was meant to be there. For the next six days I’ll be traveling up the Pacific Northwest, specifically through Portland, Seattle, and Vancouver, exploring local markets, hiking trails, restaurants, cafes, and everyday life with the intention of not only documenting the experience, but truly immersing myself in the possibility that perhaps, maybe someday, I could find myself here.
Located in the heart of SE Portland, Brian Heck’s organic, decadent, and faultlessly healthful Canteen finds an artful balance between holistic and comforting. With menu options ranging from cashew cream and fresh fruit parfaits to an avocado and red curry ‘Bangkok Bowl’ with aduki beans, and kimchi, I found myself most drawn to Canteen’s ‘Apple Ginger Greens’ smoothie, ‘Summer Breeze’ green juice, and couldn’t help but munch away on their overflowing ‘Walnut Taco Salad’ with creamy avocado curry dressing and a cashew based nacho spread to swoon over. A canteen intended for the everyday eater – a place where people can come, eat, and leave satisfied and nourished as part of their daily routine- generously portioned meals and sips range from $5-$10.
Canteen’s Summer Breeze Juice [makes 1 juice, 16 oz]
¾ cup (4 oz) pineapple, with skin
1 large (6 oz) apple, with skin
½ large (6 oz) cucumber, with peel
½ lime, with rind
1 large handful fresh cilantro
Run the pineapple, apple, cucumber, lime, and cilantro through a juicer. Pour into your favorite glass (perhaps over ice!), serve, and enjoy!
