Located in the heart of Thomas Circle, Zentan, a Japanese-inspired small plate eatery in the Donovan hotel, celebrates local and sustainable ingredients and a meal’s harmony, putting a modern twist on traditional Asian comfort foods. With menu options ranging from bacon wrapped Hotate scallops, crispy chickpeas and brussels, and hand-crafted cocktails to a cook-it-yourself Miyazaki beef hot rock, I’ve found myself most drawn to their kale salad served with a smoky lime ginger dressing and the ‘Golden Eye’ – a tempura sweet potato maki roll with seasonal mushrooms, creamy avocado, and crispy taro root. Dimly lit for my taste, the countdown to spring continues. You’ll find me taking full advantage of their rooftop, Wild Mushroom Tacos and a Famous Shanghai Club Buck ginger beer cocktail in hand. Zentan’s Kale Salad with Lime-Ginger Dressing [makes 2 servings, main]
2 large beets, different colors preferred
1 tablespoon soy sauce (or Tamari)
1 tablespoon rice vinegar
1 teaspoon lime juice
1 teaspoon sesame oil
1 ½ teaspoons shallots, diced
1 teaspoon fresh ginger, grated
¼ cup canola oil
4 cups kale, roughly chopped
1 radicchio, roughly chopped
¼ cup raw pumpkin seeds, toasted
Preheat oven to 400 degrees F, rack in the middle.
Wrap individual beets in foil and seal tightly. Place on baking tray and roast for 45-60 minutes, or until fork easily pierces the beetroot. Once beets have been removed from oven, allow to cool, then trim off ends, peel off skin, and cut into bite sized cubes.
Meanwhile, in a small bowl, whisk together the soy sauce, lime juice, sesame oil, shallots, and ginger. Continue to whisk while slowly adding the canola oil, little by little, until fully incorporated. Set aside.
To serve: Gently mix roughly chopped kale and radicchio with Lime-Ginger dressing (there may be an excess of dressing, so dress to taste). Garnish with toasted pumpkin seeds and roasted beets. Enjoy!
