I’m a sucker for new beginnings – any opportunity to consciously and introspectively evaluate my interactions with the world, to forgive myself for negative thoughts, negative energy, to celebrate the successes, and allow myself a magical opportunity to begin a new. A fresh slate. With springtime a mere few hours away, a whole new season of opportunity, accomplishment, and self-discovery awaits. Each season is a new beginning, each day is a new day.
Inspired by a recent series of life changing early-springtime sunsets, the yellows as golden as the center of the earth, today I couldn’t be more excited to share my Roasted Golden Beet and Pistachio Quinoa Salad with Tahini Mint Dressing. Made with a texturally enlightening combination of crunchy pistachios, melt in your mouth golden beets, and nutty quinoa, this simple vegan salad is only elevated by a few good dollops of Tahini Mint Dressing, the perfect balance of rich and transcendently bright. I serve my beet salad with a few Baked Pistachio and Mint Falafel, for good measure.
Roasted Golden Beet and Pistachio Quinoa Salad with Tahini Mint Dressing [makes 6 servings]
6 large golden beets (about 2 ¼ pounds), stems removed and thoroughly scrubbed
½ cup tahini
2 cloves garlic, minced
juice of 1 lemon
1 tablespoons extra-virgin olive oil
½ teaspoon himalayan sea salt
¼ cup fresh mint, finely chopped
¼ cup vegetable stock
3 cups cooked quinoa, chilled
1 bunch beet greens (about ½ pound), roughly chopped
½ cup raw pistachios, roughly chopped
Preheat oven to 400 degrees F, rack in the middle.
Wrap individual golden beets in foil and seal tightly. Place on baking tray and roast for 45-60 minutes, or until a fork easily pierces the beetroot.
Meanwhile, in a small bowl, whisk together the tahini, garlic, lemon juice, olive oil, sea salt, mint, and vegetable stock until well combined. Set aside.
Once beets have been removed from oven, allow to cool, then trim off ends, peel off skin, and cut into bite sized cubes.
To assemble: In a large serving bowl, gently toss roasted beets, cooked quinoa, chopped beet greens, and raw pistachios with tahini mint dressing. Serve and enjoy!
