For those pesky, yet all to frequent afternoons you need a fast-paced lunch on the go or something a bit more substantial to bite into while sipping on a piping mug of vegetable broth, this very quick, very easy curried cauliflower and hummus toast is just your thing. Made with warming turmeric, cumin, and cinnamon these vibrant cauliflower florets require only minutes of preparation and roast to charred perfection just in time for you to toast your toast and spread a healthy schmear of creamy hummus. I serve my curried cauliflower and hummus on toasted sourdough so the spices and hummus can get into those perfect nooks, though I’m sure a dark rye would be just as (if not more so) delicious.
Curried Cauliflower and Hummus Toast [serves 4]
½ large cauliflower (about ½ pound), cut into very small florets
1 tablespoon olive oil
1 teaspoon ground turmeric
½ teaspoon ground cumin
pinch ground cinnamon
pinch ground nutmeg
3 sprigs thyme, leaves only
salt & pepper to taste
½ cup prepared chickpea hummus
4 thick cut slices sourdough, toasted
Preheat oven to 425 degrees F, rack in the middle. Line a baking sheet with parchment paper.
Meanwhile, in a large bowl toss cauliflower, olive oil, spices, and thyme until thoroughly combined. Transfer to baking sheet and bake for 12-15 minutes or until cauliflower is fork tender and visibly charred. Allow to cool.
To serve: evenly distribute and spread the hummus on each slice of bread, top with the curried cauliflower.
