Throughout the month of January, I challenge us to embrace the mantra of gradualness, celebrating each victory, each run (however long), each piece of fruit (instead of that cupcake), each attended yoga class. By acknowledging our incremental efforts and successes, however minute or grand, life and our attitudes about it take on a monumentally positive spin and we find success in ever day. With so many people kicking off 2015 with the intention of incorporating more healthful practices into their everyday, I’ll be sharing a series of lighter and abundantly nourishing recipes- perfect for those seeking a post-holiday reset or for plant-based inspiration in this new year. A success in every meal.
With gingerbread cookies and peppermint lattes a distant (or perhaps not so distant.. keep living the dream) December memory, today I am so excited to share a simple, delicate, and virtuously healthful recipe- my Shaved Cauliflower and Red Cabbage Salad. Made with crunchy walnuts, fresh lemon juice, and cruciferous cauliflower and cabbage, this vegan salad is rich in glucosinolates, a phytochemical known to assist in regulating our body’s detoxification enzymes and protect against cancer. A refreshingly light meal or accompanying side, I serve my shaved salad topped with a few extra squeezes of lemon and thick slices of ripe avocado – especially alongside Susty Party’s Green Party Pack.

Shaved Cauliflower and Red Cabbage Salad [makes 6 servings]
½ head cauliflower (about ¾ pound), tough leaves removed
½ head red cabbage (about 1 pounds), cored
6 inner stalks celery with leaves
½ cup flat leaf parsley, roughly chopped
½ cup (2 ounces) raw walnuts, roughly chopped
2 teaspoons Dijon mustard
juice and zest of 1 lemon
¼ cup olive oil
Using a food processor fitted with a slicing disk (or a handheld mandoline), shave cauliflower, cabbage, and celery. Transfer to a large serving bowl and gently toss with parsley and walnuts. Set aside.
To prepare dressing, in a small mixing bowl, whisk together mustard with lemon zest and lemon juice. Gradually whisk in olive oil until well combined. Pour over tossed salad immediately prior to serving. Enjoy!
