It’s incredible (cue: slightly overwhelming) how much time busyness requires and how few moments are then left to allocate to the self. To find time for a consciously extended nap, to make that 5:30pm Tuesday night yoga class with a favorite instructor, to prepare a meal worth preparing. So many of us earnestly strive to succeed in our professional lives, balancing time to meet deadlines, schedule exams, move forward, yet leave ourselves- those opportunities to put ‘me’ first and truly nourish our minds and bodies in a meaningful and beneficial way- in our wakes. Stretched thin, how do we find a healthful balance for all around success?
A few weeks back I was introduced to Sakara Life, an organic weight loss and healthy living meal delivery program (currently available in Washington, DC, Manhattan, NY, and parts of CT, MA, NJ, and PA) based on a whole-food and plant-rich diet. Although my first Sakara day was a bit rocky – think brown, dry, over-seasoned, and uninformative (although Sakara provides superfood spotlights, an ingredient list would be preferable and more illuminating)- the consecutive two were impressibly vibrant, balanced, and nourishing. The flavors were bright and alkalizing, each meal nutrient-dense, yet light and spa-like, and required zero effort – leaving me free to handle my ‘busyness’. Although I tend to find comfort in the process of cooking – bopping through the market isles, mixing, creating- handing that time (three days of prepared breakfasts, lunches & dinners) over to Sakara felt like a small win- success found in allocating my time towards work-life while fueling my ‘self’ with seemingly optimal nutrition. Balance?
Naturally sweetened with real pumpkin and pure maple syrup, today I am so excited to share a new breakfast favorite (and MUST MAKE) inspired by Sakara, my Nourishing Pumpkin Granola. Made with gluten free rolled oats (I used Purely Elizabeth’s Organic 6-Grain Hot Cereal with organic gluten-free oats, buckwheat groats, millet, amaranth, flax , quinoa, chia & hemp for added nutrition, but any will do!), omega-3 and antioxidant rich walnuts and pumpkin seeds, and warming cinnamon, this seasonal vegan granola packs a nourishing and flavor packed punch. The perfect breakfast to make any morning a celebration. I serve my granola over mixed berries and ripe banana with a big mug of my favorite black coffee.
Nourishing Pumpkin Granola
inspired by: Sakara Life, Cinnamon-Spiced Pumpkin Granola
½ cup pumpkin puree (100% pure)
¼ cup pure maple syrup
2 tablespoons coconut oil
3 cups gluten free rolled oats (I used Purely Elizabeth’s Organic 6-Grain Hot Cereal)
½ cup walnuts, roughly chopped
¼ cup pumpkin seeds
1 teaspoons ground cinnamon
Preheat oven to 350 degrees, rack in the middle.
In a medium saucepan warm pumpkin, maple syrup, and coconut oil until warm and well combined. Remove from heat and stir in remaining ingredients, ensuring that all are thoroughly coated with pumpkin mixture.
Transfer granola to a parchment lined baking sheet and place in oven. Bake for 30 minutes, stirring every 10 to prevent burning, or until granola is dry and golden. Allow granola to cool to room temperature and store in airtight container.
