Ever the lover of a creamy, creamy green smoothie, this morning I am so excited to share one of my new favorites: the Coco-Nut Cream. This rich, sweet, and completely raw smoothie is made with protein and good fat packed almonds and chia seeds (think omega-3’s and monounsaturated fatty acids), creamy coconut oil, decadent vanilla bean, and speckled banana. Toss in a heaping handful of spinach and a healthful scoop of wheatgrass and you’ve got a perfect morning start-cheers.
Coco-Nut Cream Smoothie [makes 1 smoothie]
¾ cup raw coconut water
1 medium ripe banana, frozen
1 cup spinach
½ ounce (12-14 whole) raw almonds
1 teaspoon chia seeds
1 teaspoon coconut oil
1 teaspoon wheatgrass powder (option)
½ whole vanilla bean’s seeds (or ½ teaspoon pure vanilla extract)
1/8 teaspoon Himalayan sea salt
Place all of the ingredients in a high speed blender.
Blend for about 45 seconds, or until desired consistency is reached.
Pour the smoothie into your favorite glass, allow to sit for up to 5 minutes so chia can thicken, then enjoy!
