Inspired by Juice Press’s raw Sin O Bun, today I am so excited to share my (almost) raw Chai Cinnamon Rolls with Cinnamon Cashew Frosting. Made with protein and fiber rich raw buckwheat groats, a heaping teaspoon of cinnamon, and plant-based chai protein powder, these chewy bite sized rolls are the perfect post workout morsel or early morning breakfast (two should suffice as a balanced snack, depending on your level of activity). Serve with a tall glass of water, greener juice, or black coffee.
Chai Cinnamon Rolls with Cinnamon Cashew Frosting [makes 12 rolls]
Chai Cinnamon Rolls
1 cup raw buckwheat
1 cup dates, pitted (soaked for a min. of 2 hours if dry)
¼ cup golden flax seeds
¼ cup vanilla chai protein powder // I use Vega One all-in-one, Vanilla Chai
1 teaspoon ground cinnamon
1teaspoon pure vanilla extract
In a food processor fitted with an S blade, process all ingredients until thoroughly combined (about 5 minutes-ensuring that buckwheat and flax seeds are very fine and a dough ball forms).
Remove dough from processor and divide into 12 equal pieces. Roll each piece into a ball then gently flatten. Set aside.
Cinnamon Cashew Frosting
½ cup raw cashew (soaked for at least 2 hours, then rinsed and drained)
2 teaspoons coconut oil
1 teaspoon coconut sugar
¼ teaspoon pure vanilla extract
Pinch of ground cinnamon
1 teaspoon filtered water
In a high speed blender or food processor fitted with an S blade, process all ingredients until thoroughly combined and texturally very smooth. Remove frosting from blender.
Using a knife, gently spread an equal amount of frosting on the top of each chai cinnamon roll. Dust with cinnamon if desired, enjoy!
