I realize brown sludge is not the most appetizing of names. Who wakes up and is like, MAN, I could really go for some SLUDGE. Well, my beautiful friend, now you do!
‘BROWN SLUDGE’- a creamy, creamy buckwheat porridge variation made with ripe and speckled banana, sinfully sweet medjool dates, and a heaping scoop of chocolate protein powder. This raw & vegan (and gluten free) porridge is perfect for those mornings where lunch may be hours away or you have a longer, more strenuous workout ahead. I serve my porridge topped with thick slices of ripe banana, my favorite granola (for an added crunch), and a mug of black coffee.
Brown Sludge [aka: Chocolate, Banana, Buckwheat Protein Porridge, serves 4]
‘brown sludge’ keeps exceptionally well in the refrigerator in airtight tupperware. Make a big batch at the beginning of the week and have breakfast (or sludgy snack) ready to grab and go!
1 cup raw buckwheat groats
2 medium ripe (speckled) banana, peel removed
1 teaspoon ground cinnamon
½ teaspoon pure vanilla extract
2 medjool dates, pitted
¼ cup firmly packed chocolate protein powder // I use Vega One all-in-one: Chocolate
½ cup almond milk (or non-dairy milk of choice)
Place raw buckwheat in a medium bowl then cover with filtered water. Cover bowl, refrigerate, and allow buckwheat to soak for at least 8 hours- overnight. Thoroughly drain.
In a food processor fitted with an S-blade, pulse soaked buckwheat, bananas, cinnamon, vanilla, dates, protein, and almond milk until thoroughly combined. I like my porridge very smooth, so I give it a few good whirls! Serve in your favorite bowl with your favorite toppings, enjoy!
