Watermelon have finally started appearing in markets in their big, vibrant, succulent, and juicy glory- I could not be more excited! There is something so monumentally summertime about their hot pink flesh, speckled seeds, and green green rinds that screams endless warmth, screams freedom, screams ‘get in my belly!’.

Washington, DC is just on the brink of summer, and with HOT, longer, sunshiny days, and my determination to spend as much time outside as possible, I can’t help but indulge. Today I want to share one of my favorite ultra hydrating (watermelon is 92% water!) warm weather watermelon favorites: watermelon mint juice. This sweet treat contains body fat reducing citrulline, anti-inflammatory and heart healthy lycopene, and immune boosting vitamin C- all good things that will keep your body running optimally while you keep yourself cool and comfortable.

I love to serve my watermelon mint juice over big ice cubes (the colder, the better!) with fresh muddled mint leaves and a little added ginger for an extra kick, xx

Watermelon Mint Juice [makes 1 juice, 16 ounces]

4 CUPS, ABOUT 1 ½ POUNDS WATERMELON FLESH
¼ CUP FRESH MINT LEAVES
1 INCH KNOB GINGER (OPTIONAL)

Run the watermelon, mint, and ginger through a juicer. Pour into your favorite glass (perhaps over ice!), serve, and enjoy!
