I can’t emphasize how badly I’ve wanted a homemade gingerbread man cookie.
Or how much I’ve been talking about them..
And so without further ado, I present you with my simple vegan gingerbread man cookie recipe: a perfectly chewy, spiced [and dare I say low calorie] Christmas cookie I can assure you even the pickiest Santa will go crazy for!
Spiced Gingerbread Man Cookies [makes 14 men // may vary depending on cutters used!]

1/3 cup coconut oil, liquid
3/4 cup evaporated cane juice sugar
1/4 cup unsulfured blackstrap molasses
1/2 cup almond milk, or plant based milk of choice
1 cup whole wheat flour
1 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon cinnamon
1.5 teaspoons ground ginger
Frosting & Decorations of choice
Using either an electric stand mixer or a large bowl, cream together oil and sugar until well combined.
Whisk in the molasses and almond milk (this will all look very goopy, don’t worry!).
Add remainder of ingredients (except frosting & decorations) and continue whisking until a stiff, but moist, dough is formed.
Remove dough from the bowl and form into a flat disk. Wrap the dough in plastic wrap and chill for at least 1 hour.
Preheat oven to 350 F and place rack in middle.
After at least 1 hour, roll the dough out on a lightly floured surface to about 1/4 inch thick. Cut out your cookie shapes and carefully place each cookie on a nonstick baking sheet. Bake for 8 minutes.
Allow cookies to thoroughly cool, then decorate and enjoy!
