Red Curried Broccoli with Hazelnuts [Serves 4]
1 tablespoon coconut oil
8 cups broccoli florets, fresh or frozen
1 ounce hazelnuts, roughly chopped
1 tablespoon ginger, minced
1/4 cup red curry paste
In a large skillet, heat coconut oil over medium-high heat.
Add broccoli and hazelnuts to the skillet and sauté until well browned (5-7 minutes).
Remove from heat and add ginger and red curry paste to skillet. Stir until broccoli is well coated, then dig in!
